The Easiest Summer Snack Ever

Tomatoes and Cheese

The whole family is crazy for good summer tomatoes. So far they have been so-so but pretty soon we will be drowning in fresh tomatoes from our garden and the local farmer’s market. My fave way to eat them, is sliced with a little Himalayan sea salt sprinkled on top.

But the tastiest version that we make for snacks and meals is just sliced tomatoes, a thin slice of soft mozarella cheese, drenched in EVOO, vinegar, and dried Italian herbs. In the heat of the summer I think the kids and I could eat this for lunch and dinner… just a plate of tomatoes. Leave out the cheese and you still have a spectacular dish. It is a little slice of heaven on earth…

  1. We do something similar, except I chop the tomatoes, shred the cheese and serve it more like a salad.

    Love this combo! It is also very yummy using balsamic vinegar and some fresh basil!

    My new favorite summer snack is your green popsicles from your raw food blog! YUM!!!

    But for quick easy meals, I like to grab a loaf of good bread, a dish of olive oil, a hunk o cheese, and whatever juicy fresh fruits we have on hand. (Apples, grapes, peaches, pears, berries, figs. . .) Tear pieces of bread to dip in the oil, slice the cheese and the bigger fruits, and munch away! Crackers do just fine if I have no good bread.

  5. Oh, man, I wish I could have a proper garden and grow me some BIG juicy tomatoes – I’ve got three cherry tomato plants in containers on my wee balcony, and I’m hoping this year they’ll be good. Have had some issues in the past with them being killed by typhoons, bugs, etc.

    As for snacks for my preschooler and me – we go for peanut butter balls that I stick in the fridge – they are so nutritious and good in the fridge for summer. http://www.mamatouille.com/2009/05/pb-balls.html

    Actually, my favorite is a pasta dish.

    Angel hair tossed with sauteed fresh tomato and garlic in olive oil. Top with plenty sea salt.

    If I get all snazzy I add capers, olives, and artichokes. MMMMM.

    Our favorite tomato recipe-toasted organic sourdough bread,spread with organic or homemade mayo, sliced tomatoes, gray salt, and organic basil leaves-top with another slice of sourdough and eat-Yum.

    I love fresh strawberries from the Farmers’ Market drizzled with balsamic vinegar. Yum!

    Another great variation is sliced tomatoes (heirloom if available) with sliced red onion and some crumbled goat cheese topped with evoo, balsamic vinegar & a little salt & pepper. Simple & spectacular!

    We love a good spinach salad with fresh strawberries, almonds, and poppy seed dressing. Yum!

  12. Oh yum… my dream meal would be those two things with olives and baguette. About the only time I miss wheat!

    My husband is Arabic so we go to the Arabic grocery store and get their fresh bread, top it with sliced tomatoes and feta cheese then dip in EVOO that has a little bit of s&p in it. Yum!
